Today would be my Dad’s 70th birthday, so I thought it only fitting to do a cookie that reminded me of one of our favorite past times. Oreo’s!
My girl Nahanny taught me how to make these a few years ago, and since I haven’t made them since getting Velma, they will count towards my fifty-two.
These are so simple! I used Cookie #13 as my base, and with a medium cookie-scoop, scooped all the dough into cookie balls.
Here’s where I improvised a little ~ based on previous experience, these cookies can be a little overwhelming – three cookies in one (top, Oreo, bottom). Even I, as an avid cookie eater, could usually only eat half of one at a time. What a tragedy! I changed it up a little so you can enjoy a whole cookie without the sugar coma. So, I used mini Oreo’s, and split the cookie dough balls I just made open to insert the baby Oreo.
Worked great! A normal sized cookie with a surprise inside. As usual, I refrigerated the dough for 24 hours, and baked as directed. They are perfect!
