Being very lactose intolerant myself, we will have to take AJ on his word that this was “real good”!

This seemed like a win, being a new “carb free” household. Something that had the feel of the comfort food but without the pasta.
We took some liberties due to grocery store availability – we used 10oz of Velveta cheese instead of the soup called for, and also added a splash of half-and-half.
Place it in the slow cooker for three to three and a half hours and then yum!
