Chocolate Chip Pudding Cookies
So I made a little sign to go next to the cookies. This makes me happier than it should. Fact is, I keep loosing track of what number I am on. I am hoping this will keep me organized.
This week has been busy with social gatherings. Dare I say I am cookied-out. I think after this weekend, I will go on a short hiatus. Regardless, on to the cookie at hand!
I was asked to bring a cookie fit for ice cream sandwiches. I wanted a crispy cookie that could hold ice cream, but still soft in the middle. And on the thicker side. I finally decided on this one, that has pudding, to keep them soft but crispy on the edges.
Now, they taste great, but didn’t really turn out as planned. The baked a little more flat than I expected. That doesn’t make them bad, or even taste bad, it’s just not what I was going for. The first pan baked real flat, so I refrigerated for a few days and that helped. Then, I baked a bit longer than I personally prefer so they would be brown and crispy.
Overall, a good cookie, but I won’t use again for ice cream sandwiches.
