Mint Chocolate Chip Cookies

Remember me saying I was all cookied out? I was.  Three different batches last week.  I was so tired of cookies.  SO TIRED.  But by Thursday….

I was talking to my cousin about this blog, and she mentioned Thin Mint Cookies and then Mint Chocolate Chip Cookies and I couldn’t stop thinking about them.  I went to the grocery store on Friday and hoped mint chips were not just a Christmas thing.  Guess what? They AREN’T!    I found an interesting recipe on CrazyForCrust and set about making these over the weekend.

These interested me because (1) the blogger said they were her favorite cookie, just with mint chips added.  Since that is what I am hunting for, I wanted to try.  And (2), they use melted butter — not browned butter.  I wondered how this would change the cookie.

The melted butter meant that they needed to be chilled at least overnight.  It was difficult to wait so long to try them, but it was also a little like Christmas morning.  Patiently waiting maybe makes them that much tastier.

The review?  These cookies smell amazing.  These cookies are soft, but still golden.  These cookies…are awesome.   I will certainly try them again, without the mint chips, and see how the base holds up on its own.  But, I think I will be a fan!

Seriously, these cookies look, smell and taste amazing.  Best enjoyed with a cup of milk.  I left a box at the visitor’s table at church.  If you tried one, let me know what you think in the comments!
