I have been on a short cookie hiatus, but this recipe caught my eye and I thought it would be perfect for the fourth of July.  What says “I love you, USA” better than chocolate chip cookies and bacon?

First step, how the heck do you candy bacon.  It seemed easy enough.   I bought bacon, and did what the recipe said.  Turns out I bought the wrong bacon, and burnt it to a crisp.  Learn from me, people.  Buy the right bacon!  Burnt bacon is just sad.

After returning from the store with the correct bacon, I went to YouTube to see if someone could teach me (quickly) how to Candy Bacon.  This is the video I found.  So, I tried again and am happy to say, it worked out great.  Smells and tastes amazing.  (I omitted the cinnamon they mention in the video.)

Once it cooled, I used the kitchen scissors to dice up, and fold (along with the chips) into the dough I had relaxing in the fridge.  Then, I sent the whole mixture to chill overnight.

I baked them just before bed.  Kinda so I could taste them and see if I would need to start over if they were bad.  Kinda so I could give a few to a neighbor who has helped us out this week, and kinda so I could have warm cookies in my belly before I fell asleep.

My thoughts? These are good.  Kinda weird, but good.  Obviously they are a novelty … won’t be in regular rotation, but they are fun. You can try for yourself here (courtesy of The Girl Who Ate Everything, and finding this recipe on Pinterest).
