This was a fun little cookie for a friend who asked for anything maple. These bake up really fluffy and the flavor is subtle – not overwhelming at all.
While mixing, the only strange part was mixing the syrup with the butter. The syrup didn’t bond with the butter easily and I was a little concerned that something wasn’t working. But, once the dry ingredients were added, everything looked (and tasted!) fine, and they baked beautifully.
