Slow Cooker Greek Oregano Chicken

Our crock pot dish of the week is Greek Oregano Chicken.

Somehow we managed to get a surplus of chicken breast in the freezer so I went on the hunt for an interesting recipe.  I learned that most slow cooker chicken dishes call for thighs or drumsticks so it took a little longer than I anticipated.

But this one looked GOOD!  And dairy free, which is a plus for me.   We added the ingredients to our ClickList that week and started the cooking process on a Sunday afternoon.

Prep was a little more than I am used to or comfortable with – browning the chicken before putting it in the crock pot was okay, but honestly, I had no idea what I was doing.

Otherwise, it was great – made the rub and put the balance of ingredients in.   Set the timer for four hours and went about my business!

Here is the finished product!  I upped the chicken from the recipe so we could get six meals for the week to share.  What did we think?

I thought it was good, but did need some salt. (This is typical for slow cooker meals).  I was a little hesitant with the lemon but next time I will put more.  This could use a little more flavor.

AJ’s review is that it was bland and dry,  and that it needs some more seasonings to compliment the tomatoes and chicken.  And of course, salt.
