Pecan Chocolate Chip Cookies

You know how baking makes you feel happy?  Okay, maybe it doesn’t for you.  but baking makes me happy.  And I really wanted to be happy today.  I was thinking at work, what can I do tonight that will make me happy?  So I started looking for my next cookie.  I was all ready to make an Oatmeal Chocolate Chip Cookie when my roommate sent me a text and asked for a pecan batch as a special favor for a friend.  I was excited because this could count to my goal, and most would be given away and not left at home for me to eat on my own.

The good news is, these DID make me happy.  Not only because these are a pretty tasty cookie, but it was nice to treat someone else.  And try a new flavor.  And eat the dough off the mixer paddle.  I think cookie dough is my comfort food.  I am not mad about that!

Also, I think these are my new favorite.  And I don’t even care for pecans.  They mix together easy, bake beautifully (golden brown on the edges + soft and chewy centers! I’m dying.) and are the perfect amount of salty.

Okay, okay.  I did doctor them up a little.  I read on another blogger to “strategically place a few chips on the top for presentation”, which i thought was silly.  But, on the first pan I man, you couldn’t barely see chips!  So, you can be sure I strategically placed chips for the next five pans I sent to the oven.

If I had to do these over again, I would add a few more pecans.  You can’t see them in the picture, but they are in the cookie.
